Classic Pico de Gallo
Zingy, salty, and a little bit spicy, this mix hits every flavour button worth pressing. The ultimate chip side-kick.

Ingredients
4 ripe tomatoes, diced
1 avocado, diced (optional but highly recommended)
½ red onion, finely chopped
1 small green chilli, deseeded and finely chopped (optional)
A handful of fresh coriander, chopped (if that’s your style)
Juice of 1 lime
Salt and pepper to taste
Method
Dice the tomatoes and avocado, then add to a mixing bowl.
Stir in onion, chilli and coriander.
Squeeze over fresh lime juice.
Season generously with salt and pepper.
Toss gently to combine and serve fresh.
