Corn Chip Tamale Pie
Think chilli meets shepherd’s pie - but with a crunchy corn chip topping.

INGREDIENTS
500g beef mince (or turkey)
1 onion, diced
2 cloves garlic, minced
1 red capsicum, diced
2 tbsp tomato paste
1 packet taco seasoning (or homemade)
1 can diced tomatoes
1 can black beans, drained
1 cup corn kernels
½ cup water or stock
Corn Chip Topping
2 cups crushed corn chips (roughly crushed)
1 cup grated cheddar
2 tbsp melted butter
2 tbsp chopped coriander (optional)
Method
Make the filling
Brown mince. Remove excess fat. Add onion, garlic and capsicum - cook until softened. Stir in tomato paste and seasoning. Add tomatoes, beans, corn and water/stock. Simmer 10–15 minutes until thick and rich.
Prepare topping
Mix crushed corn chips with cheese, melted butter and coriander.
Assemble
Pour beef mixture into a baking dish. Sprinkle corn chip topping evenly over the top.
Bake
190°C for 20–25 minutes until golden and crunchy.
Rest
Rest for 5–10 minutes before serving.
