Corn Chip Crumbed Chicken + Chilli Honey
Crunchy, golden and perfect for sharing, this corn chip–crumbed chicken is an easy way to turn a simple dinner into something a little special.

The Chicken
Ingredients
2 chicken breasts
2 cups of Sonora Salted Corn Chips, crushed into fine crumbs
1 egg
Olive oil, for cooking
Chilli Honey
Ingredients
1/4 cup honey
Chilli flakes, to taste
1/2 lime, juiced
Pinch of sea salt
Method
Place the corn chips into a food processor and pulse until fine crumbs form. Measure out 2 cups of the crumbs and transfer to a shallow bowl.
Slice the chicken breasts in half horizontally to create four even pieces.
Beat the egg in a separate bowl.
Dip each piece of chicken into the egg, then coat thoroughly in the corn chip crumbs. Press gently to help the crumbs stick.
Heat a generous amount of olive oil in a pan over medium heat. Cook the chicken for 3 to 4 minutes per side, or until golden and cooked through.
While the chicken cooks, gently warm the honey in a small saucepan. Stir through chilli flakes, lime juice and a pinch of salt.
Drizzle the chilli honey over the chicken just before serving.
Serve with a simple green salad or place everything in the centre of the table and share. Best enjoyed together.
