Smoky Black Bean & Corn Dip

Smoky, hearty, and packed with beans, sweet corn, and a little chipotle bite. The kind of dip that turns “snacking” into a full-on event.

Prep time: 10 minutes

Total: 10 minutes

  • Ingredients
    • 1 can black beans, rinsed and drained

    • 1 cup corn kernels (canned or thawed frozen)

    • 1 small red onion, finely diced

    • 1 tomato, diced

    • 1 small red capsicum, diced

    • 1 tbsp chopped coriander (cilantro)

    • Juice of 1 lime

    • 1 tbsp olive oil

    • 1 tsp ground cumin

    • 1/2 tsp smoked paprika

    • 1 chipotle in adobo, finely chopped (or 1/2 tsp chipotle powder)

    • Salt and pepper to taste

  • Method

    1. In a bowl, mix beans, corn, red onion, tomato and capsicum.

    2. Add coriander, lime juice, olive oil, cumin, smoked paprika and chipotle.

    3. Stir well, season to taste, then chill 10–15 minutes before serving for best flavour.

    4. Serve with your favourite Sonora Foods Corn Chips.
