Guasacaca Verde

Creamy avocado, loads of fresh herbs, and a tangy kick that keeps things bright. Basically guac’s cooler, saucier cousin.

Prep time: 10 minutes

Total: 10 minutes

  • Ingredients
    • 2 ripe avocados

    • 1 small onion, roughly chopped

    • 1/2 green capsicum, roughly chopped

    • 1 small jalapeño (optional, for heat)

    • 2 garlic cloves

    • Big handful coriander (cilantro)

    • Small handful parsley (optional but good)

    • Juice of 1 lime

    • 1 tbsp white vinegar

    • 2 tbsp olive oil

    • 1/2 tsp salt, plus extra to taste

    • 2–4 tbsp water (to loosen)

  • Method
    1. Add onion, capsicum, jalapeño (if using), garlic, coriander, parsley, lime juice, vinegar, olive oil and salt to a blender or food processor.

    2. Blitz until mostly smooth.

    3. Add avocado and blend again until creamy.

    4. Add water a little at a time until it’s a pourable, dip-able consistency. Taste and season.

    5. Serve with your favourite Sonora Foods Corn Chips.
